Dish of the Week: Lasagna

Our vegetarian lasagna is a five-layer twist on a classic favorite. Don’t be fooled by the name “stinging nettles” – these delightful veggies are delicious, packed with protein, and hugely flavorful. Their bright, peppery flavor mixes beautifully with mild asparagus, complementing the taste of the leeks. Morels, a nutty and flavorful type of mushroom, add a richness of flavor that makes it easy to forget this dish is vegetarian. The meal is held together with layers of creamy sheep’s milk ricotta and flakes of sharper pecorino cheese. The dish is liberally garnished with a mint pea pesto that is fresh and slightly sweet with a hint of garlic.

Real Wedding Inspiration: A Rustic Wedding in The Tavern

This Sunday, a ceremony on our balcony was followed by a reception in The Tavern. Food and beverage were served upstairs on the mezzanine and in the adjoining bar so that guests could mingle on their way to their tables in the main dining room. It was a warm, sunny day that lit up the reception through The Tavern’s many windows.

Real Wedding Inspiration: Mermaid Inspiration in the Ballroom

Last Saturday, the Diamond Mills balcony was home to a stunning outdoor ceremony followed by a reception in the Ballroom. The weather was perfect and the blue sky matched perfectly with the sea greens and blues on the tables inside. The mermaid-inspired color-scheme went beautifully with the ceremony overlooking our famous waterfall.

Real Wedding Inspiration: An Indoor Ceremony and Reception

Last Friday, Diamond Mills hosted an indoor ceremony, followed by a cocktail hour and reception in the main Ballroom. The bride, her train carried by her bridesmaids, made a grand entrance from the top of our staircase. Here’s a peek at the way her gorgeous reception looked before guests arrived!
